It’s post Merdeka Day today but I am still in a patriotic mood since we still have the Malaysia Day Celebration (read: Holiday) coming up soon on September 16. So, today’s menu is my mom’s Easy Stuffed Tomatoes with Minced Meat – an easy to prepare but healthy steam dish.
A little bit about Tomatoes
Do you know that tomatoes are categorised botanically as fruits? That’s because like apples and strawberries, the tomatoes we eat are actually the “fruit” part of the whole tomato plant’s anatomy, sounds logical to you? However, since they are usually served cooked or paired with savoury flavours, they are also known as culinary vegetables. Other fruits in similar categories are peppers, chillies and cucumbers etc. (Source: Wikipedia)
According to Medical News Today, tomatoes are considered super food that are jam-packed with nutrients and fibres – an enough reason for you to try out this stuffed tomatoes recipe. This is really a good way to introduce tomatoes into your children’s diet. The cooked tomatoes tasted surprisingly sweet and is both appetising as well as appealing to children.
For the purpose of this dish, I recommend that you use big and red tomatoes as pictured below because they taste better when cooked and hold the stuffings nicely.
You can use either minced meat or chicken for the stuffings. The stuffing recipe are somewhat similar to our hugely popular Easy Homemade Nuggets – albeit a healthier version enriched with the sweetness of tomatoes. I love the gravy from this dish and it is also perfect to mopped up all the white rice to go with it.
Do take note to cut the tomatoes across the centre in order to form a bowl to hold the minced meat or chicken (refer picture in recipe). Don’t worry too much about the quantity of meat to tomatoes. Buy enough tomatoes that you think you need. Distribute the minced meat as evenly as possible over the halved tomatoes. Extra meat just make into meat balls.
